Artichoke :: Globe Artichoke, Jerusalem Artichoke and Chinese Artichoke.

Artichokes are grown for their heads or tubers depending on which Artichoke you are growing. The Globe Artichoke is grown for its head while the Chinese and Jerusalem Artichokes are grown for the tubers.

The leaves of the Globe Artichoke can be pickled, steamed, boiled or eaten raw. The core of the artichoke is discarded. The tubers of the Chinese and Jerusalem Artichokes are eaten cooked.

Growing Artichokes

Artichokes are best grown from offshoots or crowns. Plant once the risk of frost is over. Artichokes require constant moisture levels to produce satisfactory flower heads. A humus rich well drained soil is best. Artichoke roots grow close to the surface so be careful when cultivating between rows.
